Dev Okonkwo
Dev spent four years in supply-chain logistics for a company that moved refrigerated flowers, which he says taught him everything about coffee except how it tastes. He travels three months a year and comes back with photographs of drying beds and almost none of himself. He has a rule about not buying a lot he can't explain to a farmer in their own terms, which has cost the roastery a few good deals and saved it from several bad ones. In the cupping lab he scores last on purpose so the newer staff commit to a number before he opens his mouth. He keeps a running list of coffees he passed on and later regretted, and he will read it to you unprompted, at length, like a man confessing.
